Aroma and Flavor Scalping Determination – Utilizing Objective, Instrument Based Protocols

 In a perfect world, food and beverage products could be packaged in inexpensive plastic packaging, placed on the shelf and expected to retain their flavor character and quality for months or years of storage. Back to the real world, a number of processes act on the product to disturb this picture.

These processes include oxidation based flavor changes due to through-wall migration of oxygen, acceleration of oxidation processes as a result of exposure to UV light and storage temperature induced effects; just to name a few. One additional vehicle for negative impact on flavor quality is the loss of critical aroma or flavor components through ‘scalping’ interaction with packaging components.
